M&M’S Love Note Chocolate Biscuits

Ingredients
- 144g all-purpose flour
- 26g cocoa powder
- 2g baking soda
- 0.5g salt
- 65g unsalted butter, at room temperature
- 112g cup sugar
- 1 egg yolk
- 1.25ml vanilla extract
- 30g grated dark chocolate
- 158g M&M’S Milk Chocolate Minis, divided
- 120ml store-bought royal icing
- Edible markers, for decorating

Makes: 12 servings
- Sift together flour, cocoa and baking soda; set aside.
- Beat together butter, sugar and salt with electric beaters until light and fluffy. Beat in egg yolk and vanilla. Stir in flour mixture and grated chocolate until combined. Fold in half the M&M’S Milk Chocolate Minis. Shape dough into square, flatten slightly and wrap in plastic wrap. Refrigerate for 30 to 45 minutes or until chilled and just firm.
- Preheat oven to 180°C. Roll dough between 2 sheets of parchment paper lightly dusted with flour to 9-inch square, 1/8-inch thickness. Cut into 12 rectangles. Place cookies on parchment paper-lined baking sheet, spacing 2 inches apart. Freeze for 10 to 12 minutes or until firm.
- Bake for 10 to 12 minutes or until bottoms are lightly golden and tops are set.
- Cool on baking sheet for 10 minutes and transfer to wire rack to cool completely.
- Spread 30ml royal icing onto each cookie.
- Using edible marker, write notes like “Happy Holidays” on each love note cookie. Decorate with remaining M&M’S Minis, using the icing for glue.
